Vegetarian pulled pork sandwich (made with King Oyster mushrooms) served with air fryed sweet potato fries & fresh strawberries. Wanted to eat less meat, so I thought I’d try this since a friend recommended it. Thanks for sharing @carolinayy. Amazingly, it was really good and I was able to fool my husband and almost my son that it was real pulled pork haha. They did however enjoy it. I used @liveeatlearn’s inspired king oyster mushroom pulled pork recipe (link in bio) atop some cole slaw mix (made easy from the store bought bag), stuffed between toasted brioche buns. The smoky bbq sauced shredded mushrooms with the sweet cole slaw mix created the perfect fairly easy to make sandwich for dinner.

Homemade egg rolls. I use to make these for our family gatherings and it has since been a while.  For the filling, brown ground beef (ground pork can also be used or no meat at all), drain oil. Add shredded carrots, shredded cabbage & softened vermicelli noodles. Season with garlic salt, salt & pepper, stir fry til all mixed together. Taste and adjust to your liking. I served them with my dad’s sweet and sour sauce. May Ploy’s Sweet chili sauce also goes great with them.

We were so happy with our discovery of @restaurant604 before our tour to Pearl Harbor/USS Arizona Memorial. Great view of the harbor plus all the food were sooo very delicious!

Can never get enough shave ice in the hot Hawaii sun...Ice Garden’s milk pudding & shave milk ice, this is probably my new fav shave ice on the island. The ice is sooo soft. I can’t believe I’ve never gone here before this. It’s right next to the Aiea Bowl, home of the famous tasty chicken.

Grilled artichokes with garlic lemon aioli. My favorite grilled artichokes were from a local restaurant, Banderas which is no longer around anymore and I’ve been missing them lots lately. To make grilled artichokes:

1. Chop the tops off, trim the sharp pointy end of the pedals, cut in half, take out the fuzzy strands in the middle. 

2. Boil the artichokes in a pot for about 20-30 mins. 

3. Prepare the dipping sauce by mincing 1 clove of garlic, add 1/4 cup of kewpie mayo or regular mayo, squirt a dash of sriracha, add the juice of 1/2 a good sized lemon.  Add a dash of salt & pepper. Mix together  until smooth and set aside. 

4. Prepare the glaze for the artichokes before grilling by chopping 2 cloves of garlic, add the juice of 1 good sized lemon, then add 3 tablespoons of olive oil. Mix together and baste onto the cut side  of the artichokes.

5. Grill the basted artichokes on the grill on direct heat for about 15 min cut side up. Flip and grill cut side down for another 5 mins. 

Enjoy each pedal with the dipping sauce!
