I wanted to make risotto from a very long time .. And finally when @tarunaturals sent me these organic Wild Pink Indian Risotto rice grown in Assam , I just couldn’t wait to try them ..

Mushroom & Thyme Risotto Rice Recipe 🍄🌿🍚 I wanted to make risotto from a very long time .. And finally when @tarunaturals sent me these organic Wild Pink Indian Risotto rice grown in Assam , I just couldn’t wait to try them .. #VocalForLocal #MadeinIndia #indianfarmers In the notes below , please read about the water and rice ratio . Here is the recipe : 2 tbsp Olive oil 1 tbsp Chopped Garlic 1 finely chopped Large onion 50-70 grams Sliced Mushrooms 1/2 cup washed Indian Risotto rice @tarunaturals Salt to taste 1 tsp Dried Thyme 1 tsp Italian herb Mix 3 cups water 1/2 cup Milk (omit if making dairy free) Parmesan or Mozzarella cheese Chopped coriander Method: In a Wok, add olive oil , garlic and onions . Sauté them until onion turn light golden . Don’t overcook . Add mushrooms and sauté them too till they release most of their water . Add the washed risotto rice , salt , thyme and italian herbs and cook them for a while so that it infuses all the flavours.. Now start adding water one cup at a time .. Keep stirring so that the rice releases its starch and becomes creamy. Let 80% of water absorb before adding the next cup. Never add all the water at once when making risotto . You can add the milk now . Its completely optional . Just add more water if your rice is still undercooked. Grate some cheese and add chopped coriander . Mix well . Cover and let cook for another 5 min on low. You can drizzle a little bit of lemon juice on top just before serving . The outcome is an extreme flavourful dish with creamy texture without even adding any cream . For me the thyme did a fabulous job in making this a 5 star dish ., 🌿🌿 Notes: Water and rice proportions may vary on what rice you are using .. Chia Fig pudding recipe 

Chia and fig both are extremely beneficial and nutrient rich foods .. This dessert or even breakfast, with no added sugar and goodness of pure maple syrup , makes it a very healthy , rich and and an easy fix to your sweet craving .. 

Here is the recipe :
3 tbsp chia seeds @chenabgourmet 
1 cup Milk 
4-5 Chopped Dried fig 
1-2 tbsp Maple syrup @chenabgourmet 
1/4 tsp cinnamon powder (optional)
Fig , soaked almonds, seeds for topping 

Method:
In a glass or jar , add the chia seeds and milk . Mix it well.
Now add , chopped figs and maple syrup . Give it a good mix . 
Refrigerate for 2-3 hours so that the chia seeds swell up well . You can add 1/2 tbsp chia seeds more if after refrigerating , its still liquidy. 
Top it up with fig, almonds and sprinkle of cinnamon powder .. 

You can add any fruit or nuts or seeds to make it to your own liking ..

Amaranth Cashew Tikki or Chops 

Amaranth / Rajgira is a super food and is referred to as Food of Gods . These special foods should be included in our regular diet. It is gluten free , so suited for fasting time as well .. 

I made these Amazing Amaranth cashew tikkis and chops .. Deep fry , Pan fry or Air fry them as per your preference . 

Here is the recipe:
2 boiled and mashed potatoes
2 tbsp Chopped Coriander
1/2 Chopped Green chilli
1 tsp Chopped Ginger 
Juice of 1/2 Lemon 
2 tbsp or more Chopped Cashew
50 grams or 1/2 cup amaranth flour @tarunaturals 
Salt to taste 
1/2 tsp Red chilli powder
1/2 tsp Coriander powder
1/2 tsp Chaat Masala
1/4 tsp Black Pepper powder

Mix everything well and make tikkis or chops.
I pan fried them in ghee and crisped up pretty well .. Make sure to make flat tikkis if pan frying.. 
Serve with green chutney .

Bakery Style Whole Wheat Lavash Sticks Recipe 🥖🥖

Here is a fabulous, easy , delicious, totally bakery style yet healthy recipe of lavash sticks made with whole wheat. 
They crisp up so well , you won’t believe you made them yourself . 

Lavash sticks go really well with soups, dips , hummus or just as it is .. 

Recipe ( Makes about 20-25 pieces) 
1 cup whole wheat flour i.e. 120 gms 
40 grams butter
1/8 tsp Garlic powder (optional)
1 tsp Oregano 
1/8 tsp Salt 
 50 -60 ml water 

Knead this into a dough and let it sit for 30 minutes. 

Divide the dough in two parts . Roll the dough thin using flour so that it doesn’t stick to the surface . 
Apply a little water on top so that the toppings stick well.. 
Sprinkle black sesame seeds, chilli flakes or any other herbs of choice. 
Roll once again . 
Using pizza cutter cut it in desired shapes. 

Line the baking tray with butter paper , brush with a little olive oil and place the strips . 

Bake in preheated oven at 160 C for 7-8 minutes or until golden and light brown from sides . 

Remove from oven and brush again with very little olive oil . 

Bakery style and even better Lavash sticks are ready .. They turned out super amazing .. Hope you give it a try and let me know how they turn out..

Recipe :
Ice cubes

Roasted Cumin Powder
Soaked Goond Katira 
Sprite/Soda (Add sweetener if adding plain soda) 

Mix everything and taste to balance out anything ..

Bell Peppers and Baby Spinach Quinoa Salad Recipe

Quinoa is a super food and has a wonderful texture for salads. This is my new colorful take on quinoa salad and It was absolutely delicious.. It was a hit in the family and my new favourite. 
Its a one bowl salad , just mix everything up and you are good to go .. 

Recipe: 
1/2 cup quinoa washed 
1 cup water to boil quinoa 

1/4 cup chopped cucumber 
1/4 cup chopped onion
1/4 cup each of Red , yellow and green Bell peppers 
Handful of Baby Spinach 
1 tsp Finely chopped Garlic 
Juice of 1 lemon 
2 tbsp Olive oil 
Salt and pepper to taste 

To boil the quinoa, wash 1/2 cup quinoa very well and boil without covering in 1 cup water ( 1:2 ratio) 

Check the grain when 80% of the water is absorbed . If it is cooked then drain the water , if not , cook for another 2 min . 
Drain any excess water and spread on plate to cool down or keep in the fridge . 
Mix all the ingredients together only when the quinoa is cooled down.. 

You will be surprised by the outcome .. It was absolutely amazing .. The baby spinach i used here is home grown and it gave the perfect taste to this Salad ..

Mangoes are everywhere and my favourite way of using them is in Mango yogurt .. 

Here I have prepared Mango yogurt parfait with Crunchy Nutty Delight Millet Muesli by @milletmantra 

Recipe:
Mango yogurt - Combine 1/2 cup hung curd , 1 1/2 mango and 2 tbsp honey 
Reserve the 1/2 mango for adding chunks 

A super simple yet extremely gorgeous way of presenting your mango yogurt .. 

You can make this with any type of muesli or granola , just add nuts and seeds of choice to it ...

The Muesli by @milletmantra is Toasted Millet muesli with almonds, black raisins and fruit bits.. It has multi millet flakes, ragi flakes and rolled oats with palm jaggery . Super impressed by it .. Loved eating it as it is .. and absolutely loved it in the parfait .. It gave an excellent crunch. 
We enjoyed this so much and could eat it everyday ..

Quick Easy Chilli Garlic Fried Rice 

They take no time and are ready in a jiffy if you have left over rice . So easy and tasty. Perfect as an accompaniment or even perfect in itself.. 
A must try recipe which is super simple but has so much flavour.

Recipe:
2 tbsp oil
1 heaped tbsp chopped garlic
1 finely chopped medium sized onion
1 tsp Chilli flakes (you can add more)
1/2 tsp Soya sauce
1 tsp Red chilli Sauce
1 tsp Schezwan Sauce
1/2 tsp vinegar
1 cup cooked rice
Salt to taste 

Note:
You can fry some garlic to and add on top for that extra crisp. 
Chop some spring onion greens if you have and add on top. 
I love these quick and easy ways of using up leftover stuff.. Lifts simple things into such amazing dishes..

Recipe:
1/2 cup oats 
1/2 cup Seed and Nuts Italian Mix 
1/2 tsp Salt
1 tsp chilli flakes
1/2 tsp Thyme

Mix all the ingredients and let it sit for 15 minutes.

To bake : 
Make a thin layer of this by pressing on a lined baking dish. 

Bake in Oven at 170^ C for 20 minutes . Flip carefully and bake again for 20 minutes .. 

Note:
For this leave both the upper and lower rod on . 
If not using the seed mix , add 1 tsp oregano along with your choice of seeds and nuts..

Maharashtrian Misal with Wholewheat Pav 

India is so diverse in its food . Its always interesting to try something new .. Here I have made Maharashtrian staple MISAL PAV in my own way..

Dal Preparation: 
I have used Organic Whole Moth dal by @ourorganiktree 
Wash and soak 100 gm moth dal for 8-10 hours. 
Drain the water and put it in a damp cloth , cover and leave it to sprout for 2 days . 

When its sprouted . , pressure cook this dal for one whistle with a little water , salt and 1/2 tsp turmeric.. 

Recipe for Misal :
2 tbsp Oil
7-8 curry leaves
2 Finely chopped Onions
1 tbsp finely chopped ginger garlic
1 Finely chopped Tomato
1 tbsp Desiccated coconut (optional)
Salt to taste
1 tsp Red chilli powder or more
1 tbsp Coriander powder
1 tsp Garam Masala
Sprouted Moth Dal
3 glasses Water

In a pan , heat oil, add curry leaves , onion, ginger garlic .. Cook it till onions turn light golden. 
Now add tomato and cook till mushy , add the desiccated coconut and all spices and cook well.. 
To this add the pressure cooked sprouted dal and cook for 5-7 min
Now add water . Let this cook well till the oil separates and comes on top .. About 10 minutes

To plate:
In a flat bowl, add the moth without gravy , Cover with Namkeen (Dont use khatta meetha or meetha mixture) 
You can add any besan ghathiya or lehsun sev.. 
Now add the gravy or tarri of Misal
Add some chopped onions and tomatoes, green coriander leaves
Add some Nylon Sev on top and squeeze some lemon.. 

Serve with Pav.. I used wholewheat Pav here ..

Navratri Special Kuttu and Singhara Chilla

I agree we all wait for navratri to eat the navratri special pakoras. Nothing can replace that . 
But presenting to you an easy , healthy , non fried option for you all . Its yummy too.. 

Recipe
Equal portions of 
Kuttu Atta / Buckwheat Flour
Singhara Atta / Water Chestnut Flour

Add chopped green chillies , boiled and mashed potato , chopped coriander to it . 

Add Himalayan Pink Salt @blissofearth 
You can use simple Sendha Namak too .. 

Add black pepper powder and water to make a chilla batter 

Apply a little ghee or oil on tawa and cook on both sides.. 

Serve with Yummy Tamatar Aloo ki sabzi and a bowl of curd.. 

Perfect Meal for a Navratra Day or even in regular routine.. 

We dont use the regular iodised processed salt anymore in our kitchen . We have shifted to using rock salt and Himalayan Pink Salt by @blissofearth is even better ..
